Hand forged 8.25” Kyuu Mai gyuto. Kyuu Mai is a 9 layer laminate steel, we forged in house using mild steel cladding, and alternating layers of 15n20 and 26c3 high carbon steel in the core.
The handle is made from a long holly wood bolster, copper spacer and an African blackwood handle.
The weight/balance, forged distal taper and extra thin edge on this blade make for a really versatile and fun to use blade, effortless cutting.
