Here’s one of my Super Sabatier 8” Chefs knives. Carbon steel integral bolstered blade with an African Blackwood handle and brass pins.

These knives are true pieces of history, drop forged about 100 years ago at the Elephant Star Forge in Thiers France, many blades were unfinished, never hardened ground or handled. I take the unfinished blade, refine the profile to give you an even better blade than originally designed, harden them to the hardest point they can get to, grind them with very refined geometry and lastly handle them with high quality materials.

The steel in these blades varies, they all consist of good knife steel (57-61 Rockwell) but NOT always as hard or high quality steel as a 100% Fell Knife
