Here’s a 205mm Gyutohiki. Hand forged stainless clad, shirogami 2 high carbon core san mai steel.
The gyutohiki is a gyuto and sujihiki hybrid geared towards quick and effortless prep work. With a hand forged distal taper over fine hand finished bevels with an extremely fine edge, this blade is ready for work!
The handle is made from some really fun G-carta- a pressed and stabilized composite made from linens, canvas and other fabrics/textiles. Paired with a black g10 liner to make the patterns pop.
