Here’s a selection of hand forged San Mai chefs knives/gyutos.

Stainless steel cladding, nickel silver shimmed and Shirogami #2 high carbon steel core blades provide the stain resistance of stainless with the performance, edge retention and ease of sharpening of high carbon steel.

The green handled blade is 7” x 1 3/4” with a curly green dyed and stabilized mango handle, g10 spacer.

The Blue handle blade is 7 5/8” x 1 3/4” paired with a blue dyed and stabilized maple handle, g10 spacer.

The red handled blade is 7 5/8” x 1 3/4” paired with a red dyed and stabilized box elder burl handle, g10 spacer.
