This 7” San Mai Gyuto is hand forged from a stainless jacketed, nickel shimmed and Takefu Shiro 2 high carbon steel core billet of steel.
This blade has a nice distal taper from heel to tip, landing firmly in the laser category. A super fine edge with 36” hollow ground bevels, this blade is ready to do work with little resistance.
Paired with an incredibly unique handle made from an Elforyn bolster that has been carefully inlaid into the handle which is heirloom fit carefully to provide comfort and elegance. The handle is made from a block of dyed and stabilized Maple burl, in the right light it shines and glimmers while providing a really fitting contrast in more standard lighting.
